    Comments: www.alkenmaes.be Brewed for the chez Léon mussels/French fries chain, and also for the Brussels Airlines. Léon beer is pale and full-bodied. It has been specially concocted by Master Brewer Jean Pagura in collaboration with the Alken-Maes brewery to create a delicious combination to go together with the Belgian and Brussels dishes served at chez Léon. This beer is unique because it can only be tasted at chez Léon in the rue des Bouchers where it is served in a large, round glass, specially designed for it. It is the result of a clever mix of pale malts, spring and winter barley and rare hops from Germany and the UK. It derives its whole personality from a final addition of sweet and sour orange peel. This Belgian high fermentation beer is served from the barrel and is 7.2%. It is brewed at Jumet in the installations at the ancestral Union brewery.

When we were foraging in the gardens and grounds of the island the chef took us to a bog by a creek where the watercress grew naturally. I will never forget the bite that those beautiful leaves gave us. It made me think to the watercress I was subject to buying in London and how lifeless it is. Likely because its mass-produced and given nutrients that scientists decide fit rather than what it actually wants/needs to become the amazing plant that I tasted on that misty day in Scotland. In ode to the wild watercress, I wanted to combine the spice we found on that day with the Pale flavour we all love.

The insistent Scottish island breezes were bracing and rejuvenating, but at times also left us seeking the solace of a warm fire and a glass of whisky as a restorative. The baronial house hotel on the island provided both in abundance (!) and I considered a winter beer that could evoke those aromas and the flavours of peat smoke and a spicy malt character. Rye seemed the obvious choice, with some seasonal spices and the estery fruit profile provided by a traditional Belgian Abbey Ale yeast.

This beer was inspired by an afternoon spent by the water's edge on Eriska. From the moment of arrival, the shore had a magnetic draw and on a foraging trip, sampling some of the sea kelp often harvested by the chef, I was reminded of an idea floated by one of my colleagues a short time ago for a combination of seaweed and fennel in a beer. Since both were found in close proximity on this island the concept seemed to further insinuate itself and I chose the classically salted Saxon style Gose as the best vehicle to showcase these flavours.

The place called La Corne du Bois des Pendus comes from a tragic event that occurred in the 17th century during the terrible Thirty Years’ War. Polish, Croatian and Hungarian troops sent by Germany to fight against France settled in southern Luxembourg in February 1636. Believing they were in France, the troops began to ransom all surrounding villages. They tracked down the people who had taken refuge in the forest of Anlier. Between La Folie and the hamlet of Rodenhoff, where the forest of Anlier forms a Horn, the troops hanged a hundred men, women and children. It is in tribute that this place is now called la Corne du Bois des Pendus.

It is clean and precise, within an almost perfect balance of Challenger and Goldings hops, grown exclusively in Belgium. For centuries the Mechelenians drank their own ‘amber’ coloured city beer: ‘Mechelschen Bruynen’. They drank the beer from Mechelenian buckets, glasses with a content from half a litre to more than 1 litre. And because our brewery is so deeply anchored in tradition, we are the only ones who brew this beer until this day. The recipe has its origin in the 14th century. The present version is a little more heavy and contains more hops. Name: ""Hopsinjoor"" is a wordplay to for one thing the several hops which were used, and on the other hand the typical character of Mechelen of Gouden Carolus: the figure ""opsinjoor"" is intertwined with the history of Mechelen (see: www.opsinjoorke.be/Opsinjoorke/opsinjoor.htm). Kind of hops: 4 types of hops are used: Golding, Spalt, Hallertau and Saaz. These hops were fractioned at several times in the cooking process in order to keep a maximum of aroma. Regarding to taste we can say that the beer has a gentle, but nevertheless bitter aftertaste. Gold-yellow colour. The moon projected its reddish glow on Saint Rumbold’s tower, which was wrapped in a dense fog. “Fire, fire, the tower is on fire!” shouts the dreary voice of a drunken man. The alarm was sounded and people were making haste to help extinguish the so-called fire. Before the tower was reached, the moon slowly moved through the fog. From that moment on, the Mechelenians are called the Maneblussers or “Moon extinguishers”. To commemorate their heroic deed, we brew a heroic beer called The Maneblusser. A blonde beer with an alcohol percentage of 6 % VOL. Brewed according to the traditional method of high fermentation with refermentation in the bottle. For the heroic Mechelenians, but not exclusively of course. In de nacht van 27 op 28 januari 1687 wierp de Maan haar rode gloed op de spits van de St. Romboutstoren die in de nevel gehuld was. Brand, brand, de toren staat in brand! riep een dronkaard in de nacht. Overal werd de noodklok geluid en met alle beschikbare blusmateriaal werd ter hulp gesneld. Nog vóór despits bereikt werd, schoof de Maan zachtjes door de nevel en sindsdien zullen de Mechelaars voor altijd de Maneblussers blijven.
