Inspired by the wonderful fruit served at breakfast and in desserts, a bouquet of berry fruit and citrus exploding on the palate, this double IPA is chock full of New World hops with a gentle bitterness and fulsome mouthfeel too compliment the resinous hoppy aromatics.

Whilst the hotel’s amazing chef was giving us a foraging tour of the island I was absolutely blown away by the tart citrus and green apple flavour of wood sorrel. Unable to put that in a beer as large quantities knacker your kidneys, I wanted to brew something that captured that sharp fruitiness, so lots of New World hops and a wee dash of citric acid should hopefully do just that.

Inspired by our customers, employees and brewers, the Sculpin IPA is bright with aromas of apricot, peach, mango and lemon. Its lighter body also brings out the crispness of the hops. This delicious Ballast Point Ale took a Bronze Medal at the 2007 Great American Beer Festival in the Pro Am category. The Sculpin fish has poisonous spikes on its fins that can give a strong sting. Ironically, the meat from a Sculpin is considered some of the most tasty. Something that has a sting but tastes great, sounds like a Ballast Point India Pale Ale.

But once our experimental Alpha Series was launched around 6 months in, we went about constructing the Pale of our dreams. We tweaked malts and hops continuously and eventually came to release a brew known as Gamma Ray. This name came from our Creative Director Nick Dwyer, who at that time was working on the floor at Duke’s Brew and Que. Nick brought illustrations in every week. It was undeniable, the guy was a force and his imagery resonated deep. We all loved spacemen and lasers - again, simple. So we named the experimental brew Gamma Ray and Nick drew the design - drawing heavily from 'Mars Attacks' and Warren Ellis graphic novels. Our baby was born. From its release Gamma was perfection for us and joined the Beaver core range. The concept was to create a juicy tropical beer. A brew you can sit on and drink all day, rammed with juicy malts and huge tropical aromas of mango and grapefruit. Massive additions of whole leaf American hops are added in ever increasing numbers at the end of the boil giving huge hop flavour. The beer is then dry hopped for days, driving the punchy aromas so you can smell it from miles away! A beer that smells as good as it tastes, Gamma Ray packs layers of hoppy sophistication, backed up by big tropical fruit flavours. The result is an APA so drinkable that it could almost be considered a session beer.

The first DNA beer, launched in April 2013, was created by integrating a special reduction from Dogfish Head 60 Minute IPA into a classic Charles Wells brew to produce DNA New World IPA. By adopting this inventive brewing process, which mixed the best of traditional and new world brewing, the two breweries effectively took the very DNA of one beer and added it to its partner brew to create a craft beer which is like no other. This year’s Hopstravaganza is a Double IPA - with exotic tasting notes, such as spicy mango and pineapple. She was the shapeshifter and patron deity of revenge and magic who created the clouds of fog that the Tuatha Dé Danann used to conceal their identities. The Fog in our Hazy IPA conceals heaps of flavour and texture, perhaps unexpected for a beer of this gravity. Ancient Irish Mythology will tell you that The White Hag was a witch, a chameleon creature, and even Mother Nature herself. We know she was all that, and more. A spiritual force, from and of the earth. The spirit of Ireland who shaped the form of the land itself, present in everything through the pure water of the earth.

Juicy fruitiness is brought to you courtesy of three kinds of finest American hops. Grapefruit, mango, lychee and limes greet your palate, giving way to gooseberry, white currant and - no kidding - white wine. Add just the right amount of herbal bitterness and finish off with a velvety soft mouthfeel - without oats and wheat this beer wouldn’t be the same. Enjoy at 8-12C.

We brewed it with Andrzej Miller, the Grand Champion of Birofilia 2013, the biggest home-brewed beers competition in Poland. The idea we shared was fairly straightforward: an easy-drinking, everyday beer we would like to keep in our fridge. Bitter but well-balanced, light yet aromatic; instead of knocking you off your feet, American Beauty will serve to unwind and perk you up. Cheerful citrus, mango and lychee on the nose.
