One of our favourite beer styles at Partizan and the one we are perhaps best known for, the kitchen garden on Eriska seemed a wonderful place to pillage for ideas on herbal ingredients to compliment the highly attenuated, dry, natural acidityof the French Saison. The decision fell with the alluring peppery bite of nasturtium (which appeared on many of our plates over the weekend) combined with a light European dry hop and some sharp lime fruitiness to compliment the yeast character.

Most breweries have at least one piece of equipment that’s just a bit persnickity. Here at Boulevard it’s fermenter number seven, the black sheep of our cellar family. Ironically, when our brewers were developing variations on a traditional Belgian-style farmhouse ale, the perfect combination of elements came together in that very vessel. You could call it fate, but they called it Tank 7, and so it is. Beginning with a flavorful surge of fruity aromatics and hoppy, grapefruit notes (Amarillo hops), this complex, straw-colored ale finishes long, dry and spicy.

Wild minds conceive, create and craft beers that explore the boundaries of your palate. Wine Yeasts + Vinous Hops + Brut. Think Wildly Different. At Wild Beer flavour and balance come first, beer style is always a poor second. Murmur is the epitome of what we do, taking inspiration from food and drink around us, this beer is fermented with an ale yeast and 2 different wine yeasts and utilises hops with vinous notes to produce a complex, balanced beer. In the way a chef brings together tasttes on the plate, this beer has elements of sweet, dry, bitter and acidity. Wine yeasts? Yep, for a very good reason. We took inspiration from wine makers who make use of mannoproteins released during autolysis of the yeast cells when in contact with the lees to produce a richer fuller mouthfeel. We have specifically used a white burgundy/chardonnay yeast, rather than, say, Champagne, because of the time it takes to autolyse and produce these mannoproteins.
